The real work of okra slime

Who's a fan of okra stew. I would raise my hands to that question anyday. Banku and Okra stew. The slime is my favourite thing about it.
Last week Friday, I was cutting some okra for my soup and looking at how sticky it is. You know okra is very famous for that drawing nature. That slippery feel is exactly what changes just a normal watery soup into something rich and heavy that a lot of us love to eat.
It has this thick natural fiber inside it that just melts in water and turns into a heavy gel immediately.
You can think of the slimy fibers in the okra pieces as natural water storage tanks. The slime or mucus in the fiber stores up water that can be drawn up when needed by the plant leaves, and that prevent the plant from drying up in the heat. These fibers also form a natural cover or shield against dry weather to help the plant in its survival on the farm during the strong dry season and hot weather.
By adding the cut okra to the pot of boiling water, we are able to open up the natural survival means to let the rich soup thicken up naturally, without the need for any thickening agents and so on. That's why we can freely enjoy our favorite heavy, rich and thick soup or stew.
I know some people are allergic to okra, I have a friend who's like that. I wish I could eat with her for her to feel the taste but it's not going to help her body so I understand that.
