Happy Sunday and Happy New Month my super amazing people, I hope you all are doing excellent. Kindly I welcome you all to another mind blowing episode of my diary session. Sit tight guyssss

It's Sunday and it's the birthday thanksgiving celebration of our Zonal Secretary, so I woke up early said my prayers of course by singing praises to God Almighty then reading the Rhapsody of realities and the title was "OUR LEGAL POSITION" I read and prayed, then I hurried off to have my bath because I didn't want to get to church late. Of course there was free buses at the back gate taking everyone attending Christ Embassy today, so I hurriedly dressed up, I didn't want to eat o, but on a second thought I just had to and I did eat just little, then off I was to church...

When I got to the backgate, the first bus had already left, so I waited for the next while my cell leader was screaming Christ Embassy BDPA your free bus is here. Finally another bus came and we all rode in it to church. It is always a pleasant sight to behold in church, the choir sang passionately with their melodious voices, and I felt God's presence around, and fast forward to the cutting of the Cake. It was such a lovely moment, and after we closed, we were told to wait behind for cell meeting with our fellow cell members, I didn't have the patience to wait behind o, I just stood there for a while and when no one was watching I dashed out of the gate and started walking up to the main road ahead of me, I heard someone calling ALMIRA ALMIRA, and did I turn around Nooooo, I did not turn around I just focused on where I was going because I needed to get home as soon as I possible.

I had already planned to prepare Garden Egg stew, and it's what I've been craving for in a while now. So on my way back, I bought garden egg and fresh pepper, beef, yess you saw that right, I have resumed back to my beef eating era, my TEMPORARY VEGAN period has expired, I bought garlic and ginger as well because I wanted to taste those sizzling ginger and garlic sensation on my tongue. Ohhh I love it. And I think I'm getting addicted to ginger and garlic, lol.

Immediately I got home, I was already feeling very hungry, so I took off my outfit then hurried to the kitchen to start with the food preparation, I washed the garden eggs with normal water and cut off the stems at the top with a knife, then placed them in a clean pot, added water and placed it on the burner of the gas cylinder and then I turned on the gas, while the gas was on, I measured one cup of rice into a small pot, and added water waiting till the garden eggs were already boiling for me to put it down.

Note this pls: This garden eggs are the normal ones you eat raw, the ones you buy from those Aboki and you use Groundnut or that soft brown substance to eat, that is the type of garden eggs I used here, and I'm sorry I didn't snap every moment I was too hungry to think straight. Anyways let's go. After about twenty minutes the garden eggs were already boiling so I put down the pot and poured them into a filter, and I placed the pot of rice on the gas. So I brought out my hand blender, and I blended the freshe pepper, boiled garden eggs and onion. As you can see, I chopped th beef so small because I wanted it to be soft and not get stuck in-between my teeth.

After I had blended all three together with my hand blender, I proceeded to washing the beef and steaming it first so that it can be soft and all the ingredients will blend into it very well. As the beef was on the gas, I decided that it was time to shred the garlic and ginger, my brothers and sisters that was when I discovered that I didn't take them or the Aboki didn't give them to me, I just didn't know how else to explain it, and from my house to the backgate is like a thirty minutes journey which I was not ready or willing to risk, but one thing I could not risk as well is the thought of not tasting or adding my sweet ginger and garlic to my Garden egg stew, I was so sad, but then I decided that I was going to get it from the Keke Park close by, while the beef was still on the gas, I ensured that I gave myself a time, I gave myself twenty minutes to get to the Keke park and buy the garlic and ginger from the Aboki that lives near them return home before my beef gets burnt, I also told my roommate that if the time was already 2:20pm and I had not come back, she should turn off the gas for me. So I headed out, the time was 1:59pm and before I got to the Aboki's kiosk it was already 2:07pm so I asked for garlic and ginger and he said he had only ginger no garlic, ehhh God, I almost screamed it was as if I was running a race and I had short time left to get to the finish line, so I just told him to give me five hundred naira note so that I can go and get the garlic from another shop nearby while I will transfer one thousand six hundred naira to him.

He did give me the five hundred naira and I hurried off to get the garlic and returned back in haste to get the ginger from him, I gave him my ATM card to make the card payment since he had a point of sale machine. Which he did and I transferred the one thousand six hundred naira to him and left with my GARLIC AND GINGER. I got home at exactly 2:15pm and I was grateful that I got back that early to commence the food preparation. Since the ULCER CRISIS I've been advised not to eat fried food anymore or for now atleast, so I didn't fry the food.

While the beef was steaming, I added the blended garden eggs and pepper and ginger and garlic and also added a substantial amount of Groundnut oil then I covered the pot and allowed to boil for about ten minutes, I uncovered the pot and I added my sweet Knorr Chicken bullion cube to the stew to make it taste better, I also added Spicity because I love it, then I stirred it with a big spoon and tasted it, but the taste wasn't appealing to me so I added another double bullion cube of the chicken knorr and a little salt, so I tasted it again and this time the taste was appealing. It was on point so I covered the pot again and allowed it to cook for twenty minutes and my GARDEN EGG STEW was readyyy.

Now listen pls, there is no tomato in the garden eggs stew, just the garden eggs and fresh pepper, that's all. Every other ingredients can be added. The goal is to replace the tomato with the GARDEN EGGS and trust me it is very very rich and nutritious. I dished out the rice and added the GARDEN EGG STEW to it, and viola my good meal was ready.
