Recipe for a Homemade Crunchy Cameroonian Snack known as Coated Peanuts.

Hi guys, accept warm Steem greetings from the motherland of Cameroon, and welcome to my blog, where I'm gonna share a recipe for a homemade crunchy Cameroonian snack known as coated peanuts.

Coated peanuts, commonly enjoyed as a snack in Cameroon, are delicious, crunchy, and perfect for children to take to school. Although the process may look simple, making perfectly coated peanuts requires patience, consistency, and a little practice😂.

That said, the following are the required ingredients to use.

Ingredients Required

  • 4 cups dry groundnuts (peanuts)
  • 7 eggs
  • 1 cup vegetable oil
  • 1 cup sugar
  • ½ tablespoon baking powder
  • 1 nut milk
  • ½ cup water
  • A pinch of salt
  • 1 cup sweet milk
  • Flour, as needed
  • Additional vegetable oil for deep frying

The Process

Start by preparing the coating sauce. In a bowl, mix the sugar, salt, and water until the sugar is completely dissolved.

Add the eggs, sweet milk, and vegetable oil, then whisk thoroughly. You can also use a mixer or blender to make the process easier.

Add the baking powder and nut milk, and continue mixing until you have a smooth, well-blended sauce.

For convenience and to avoid wasting the sauce during the coating process, I usually pour the mixture into a container and make small holes in the lid. This makes it easier to sprinkle the sauce evenly over the peanuts.

Next, carefully select your dry groundnuts, preferably choosing peanuts that are relatively uniform in size. Place them in a large bowl that gives you enough room to shake and coat them properly.

Coating the Peanuts

This is where the real work begins 😅 and requires energy. Coating the peanuts properly requires patience and attention. Even a small mistake can affect the entire batch and prevent the peanuts from coating evenly.

  • Place the groundnuts in the bowl and sprinkle a small amount of the prepared sauce over them.

  • Immediately sprinkle some flour on top and gently shake the bowl in one direction, preferably in a circular motion.

  • Continue alternating between sprinkling the sauce and adding flour, while constantly shaking the peanuts.

  • Repeat this process until the peanuts have developed the desired thick, and even coating.

  • Once coated, spread the peanuts out on a tray, making sure they are separated as much as possible so that they do not stick together before frying.

  • Allow them to rest for a few minutes while you prepare the oil.

Frying the Peanuts

Heat enough vegetable oil in a deep frying pot or pan. Once the oil is hot, carefully add the coated peanuts in batches. Avoid overcrowding the pot, as this can cause the peanuts to stick together and fry unevenly.

Stir them gently at intervals using a wooden spoon to ensure that they cook evenly on all sides.

Fry until the coating develops a beautiful golden-brown colour. Once done, remove the peanuts and place them in a colander or strainer to drain and cool. Allow them to cool completely before packaging them in airtight containers or bags.

My Final Thoughts

These coated peanuts make a wonderful homemade snack, especially for my kids to take to school. ❤️

But one thing you must bear in mind is that you need patience and resilience😂 to be able to withstand the process. The process is definitely not as easy as it sounds when you are standing there trying to get every single peanut properly coated.

It requires frequent practice, patience, and the right technique, though, you will get the crunchy, delicious result which is absolutely worth the effort put into the process.

#s34engagement

Hi friend, the peanuts are supper delicious in my son’s voice hahahahahaha 😄. Indeed the best snack from Cameroon. The only challenge to prepare it at home is that it takes a lot of time and needs one to be extremely patience to coat the peanut. But trust me, the end product is delicious 😋.
