Easy Holiday Arrangements: Instant Roast of Eggs and Tomatoes

Holidays mean spending some time on your own and eating your favorite food. Today is Sunday, and I had the opportunity to stay at home all day because I was not busy with work. Yesterday's menu included fish soup with eggplant. So today I wanted to cook something with a little different taste but easy to make.

Thinking about it, I went to the nearest shop. When I got there, I thought, how about a simple roast of eggs and tomatoes on a lazy holiday afternoon? The idea is the work. After returning home with the necessary things, I started preparing the cooking.

Although the cooking is quite simple, its taste is excellent. First, I boiled the eggs, lightly fried them with a little turmeric and salt. Then I sautéed them in a pan with chopped onion, green chili slices, and red tomato slices for a while. When the tomatoes softened and mixed with the spices to create a beautiful gravy, the aroma of cooking spread all around.

I added a little water to the eggs fried in the grated tomato gravy, so that the spices penetrated the eggs well. Finally, I sprinkled a little chopped coriander and served the hot egg-tomato roast.

This simple egg-tomato roast with hot rice is a very satisfying meal on a holiday afternoon. Sometimes, even a simple meal cooked without much grandeur makes the holiday beautiful.
