INGREDIENTS
💚 Chicken 💚 Oil 💚 Rice 💚 Turmeric powder 💚 Biryani masala powder 💚 Salt 💚Onion 💚 Tomato 💚 Coriander leaves 💚 Curryleaves
Step1 :
I poured oil into a vessel, placed it on the stove, and heated it over a low flame; then, I added spices like black pepper, cinnamon, cloves, cardamom, and star anise to fry them.
Step 2 :
Next, I added fennel seeds and other spices and sautéed them;
Step 3 :
then, I washed two large onions, chopped them into small pieces, and added them to the pan to fry as well.
Step 4 :
While the onions were sautéing well, I added a bay leaf for aroma and sautéed it along with them.
Step 5 :
While that was sautéing, I peeled the shallots, ground them together with ginger and garlic into a paste, and set it aside.

Step 6 :
Then, I added two spoons of ghee, along with well-washed mint leaves, and sautéed them. Then, you took two tomatoes, cut them into small pieces, added them as well, and sautéed everything thoroughly.
Step 7 :
Once all these ingredients were in the pan, I added the curry leaf chicken pieces and turmeric powder, then mixed and sautéed everything well.
Step 8 :
After everything had sautéed well, I mixed in the biryani powder. Then, I added the soaked rice and the required amount of water, stirred the mixture, covered the pot with a lid, and cooked it for about 20 minutes.
Step 9 :
Once the rice was fully cooked and its aroma began to waft out, I placed a dosa tawa on the stove and set the cooking vessel on top of it to let it steam (give it 'dum').
Step 10 :
Thanks to the slow cooking and the heat from the iron plate, the chicken biryani was thoroughly cooked and released its delicious flavor and aroma. Then, I uncovered the pot, gave it a good stir, added the coriander leaves I had prepared earlier, and adjusted the seasoning.
Now, the delicious and lucious Chicken Biryani is ready.

Biryani is essentially a dish designed to save time and fuel costs while minimizing the use of multiple vessels. Although it requires a variety of ingredients, the actual cooking process utilizes very few utensils and consumes minimal fuel. Following this approach, I prepared this chicken biryani using just a single pot; this saved fuel and reduced water consumption, as only one vessel needed washing. Furthermore, using a single pot simplified both the cooking and serving processes, thereby reducing the overall workload.
When the rice and chicken were half-cooked, I turned the stove to a low flame and placed an iron chapati tawa on it to heat up. By setting the cooking vessel on the hot iron tawa, the rice and chicken continued to cook using the heat from the iron, which resulted in significant fuel savings.

I liked the method of using an iron pan at the bottom to add dum (dum) in cooking chicken biryani the most. Usually, many people get a lot of utensils dirty while making biryani, but the way you have completed the entire cooking as a one-pot meal is really smart. This not only saves gas but also reduces the mess and smoke after cooking. The entire process, from chopping onions and tomatoes to keeping the ratio of rice and meat in the right amount, has been beautifully presented step by step.
