Dear friends, I am delighted to participate in today's "Recipe of the Day: Week no. 119" contest. I won't be sharing a recipe of my own creation today. Although I love cooking, it isn't possible for me to do so right now since I am living in a hostel. However, I am sharing how carry is cooked at our hostel.

Rice is our main food.But it requires a side dish,whether made from vegetables, fish, or meat to with it. While the cooking process at home follows a certain routine, the method here is somewhat different.Because meals are prepared for a large number of people at once. There are staff members responsible for the cooking. who arrive at scheduled times to carry out their duties. Moreover, mess managers oversee operations and ensure the supply of all necessary cooking ingredients.A team of four managers rotates every fifteen days.During the time I was in charge of managing the mess.I had to be present side by side the cooks throughout the entire cooking proces,challenging task. They would often chat amongst themselves while sitting in a circle to chop vegetables, and rarely. They would strike up a story with me as well.So, that day, a potato and cabbage curry was cooked.

This contest, organized by @steemit-Ironchef, is undoubtedly a wonderful initiative. I also wish to express my gratefulness to @dasudi. I am sincerely thankful to them for organizing such an amazing recipe based competition.

Ingredients:

Ingredients	Quantity
	Cabbage	3
Potatoes	9 kg
Salt	1/3 packet
Turmeric powder	1 packet
Ginger paste	2 tablespoons
Garlic paste	3 tablespoons
Onion paste	1/2 cup
Green chili paste	2 tablespoons
Dried chili powder	1 packet
Coriander powder	1 packet
Red chili powder	1 packet
Cumin powder	1 packet
Sugar	80 g
Whole dried chilies	5 pieces
Mustard oil	1 kg
Coriander leaves	50 g
Water

Since this is a hostel meal, the quantities are calculated based on the number of people. For instance, 9 kg of potatoes has been used here to provide 100 g per person for 90 people.

Methods for making recipe:

Step: 1

At first, the women and men who had come to handle the cooking were going about their tasks and chatting. I was sitting nearby, overseeing the work. They were chopping vegetables shredding cabbage and peeling potatoes and placing them in baskets.

Step: 2

Another person was washing the chopped vegetables with water and grinding the spices into a paste in a mixer machine. Such as ginger, garlic, onion, and green chilies.

Step: 3

On the other hand, in a large pot, hot water was being boiled for a curry. On the other side, an aunt was cooking rice.

Step: 4

Now, when the water in the pot boils well. The cut and washed potatoes are poured into it. Then it is boiled. Once the potatoes are boiled, the shredded cabbage is added to it. Then salt is sprinkled and stirred.

Step: 5

Then, mustard oil is heated in another pan. Then, all types of spice pastes and powdered spices are added one by one. The spices are finely ground and added to the cabbage and potato curry with the help of a large handle.

Step: 6

Now some potatoes are melted in the curry and mixed with sugar to taste. When the cabbage curry becomes thick, the pot is removed from the stove.

Final step:

Finally, it is placed on a table covered with a cover. Then, at a certain time, it is served to everyone with rice.
