‎Last Saturday, my hubby came home with a huge bag of eggplants and tomatoes.

‎They looked so perfect and fresh, that I needed to do something delicious with them.
‎
‎We usually just fry our eggplants. It’s our way of cooking them, but this time I really wanted to try something different.

‎So, I made a salad instead. And you know what? It turned out so good
