Cooking Egusi Soup
The best-known soup in Nigeria is Egusi Soup, which is also known as melon soup. It is a very rich soup that is enjoyable with pounded yam, fufu, sermovita, or gari egba. The soup can be cooked in different ways, making it either seed or smooth, and vegetables like Ugwu leaf are mostly used in cooking Egusi Soup.
Ingredients:
- Grounded Egusi
- Meat
- Fish
- Crayfish
- Vegetable
- Pepper
- Onion
- Salt
- Seasoning
- Palm oil
Preparation stage:
Before I start cooking the Egusi Soup, I properly wash the meat and fish, put them in a clean pot, and then add salt, onion, and seasoning and allow it to cook.
I added ground crayfish, pepper, and onion into the pot with seasoning and salt and allow to cook.

- For the Egusi, I put it on a plate and mixed it with a small quantity of water before putting it inside the pot. After putting it inside the pot, I then cover and allowed it to cook.

- I added palm oil with seasoning and stir very well which I then cover the pot and allow the soup to get thick.

- After about 2 minutes, I added vegetable leaves (Ugwu) and stirred very well so it could become well mixed, which I then covered and left for a few minutes.
- I then dished out some quantity and ate.
There are several ways to cook Egusi Soup, and some people prefer using the fried method, seed, or the direct entry cooking method to cook Egusi Soup, which is a rich Nigerian soup.
