When you get home at that hour, the last thing you want is a complicated meal that takes hours to prepare. So, I opened my pantry to see what quick magic I could whip up. ​I already had some firm plantains resting on my kitchen cabinet, fresh green vegetables, fresh tomatoes, onions, and basic spices. The only thing missing was a good source of protein to elevate the meal, so I quickly dropped by the local market on my way home to grab fresh fish. ​Nothing beats a hot plate of boiled plantain served with a rich, colorful, and highly nutritious vegetable sauce! Let me walk you through the simple ingredients I used and the step-by-step process of how I put this quick masterpiece together. ​
​Ingredients Used ​

-​Ripe and Unripe -Plantains (Boiled)
​Vegetable Oil/palm oil
-​Fresh Tomatoes (Chopped)
