I already had some firm plantains resting on my kitchen cabinet, fresh green vegetables, fresh tomatoes, onions, and basic spices. The only thing missing was a good source of protein to elevate the meal, so I quickly dropped by the local market on my way home to grab fresh fish.
Nothing beats a hot plate of boiled plantain served with a rich, colorful, and highly nutritious vegetable sauce! Let me walk you through the simple ingredients I used and the step-by-step process of how I put this quick masterpiece together.
